I discovered this recipe because it is step one in making a yummy Sweet Potato Quinoa Soup (I’ll get to that one!), but sometimes all of the sweet potatoes don’t make it into the soup…

- Coconut Oil
Preheat oven to 400°. Clean sweet potatoes and chop into bite size pieces (keeping them all about the same size will help them to cook evenly). Spread chopped sweet potatoes onto cookie sheet and spray with coconut oil or melt coconut oil and drizzle it on. Toss sweet potatoes to coat. Bake in preheated oven for 25-35 minutes. Mix them up a couple of times during cooking to ensure all sides are baked. They are finished when they are soft and slightly browned. You can change it up by adding salt or cinnamon; you can also use olive oil, or cut them up like fries. Enjoy!
